Prinz Celeriac Seeds (Organic)

Celeriac - Prinz - Apium graveolens

Hardy biennial grown as an annual Prinz gives you big, round, uniformly sized white roots. With a celery-parsley flavor, this high-fiber root vegetable is excellent raw in the classic French Celerie remoulade, or cooked like a potato. Celeriac seeds are not robust germinators; expect less than 50% germination. Prinz is Septoria tolerant and resistant to hollowness.

Soil and Water: Plant or transplant in rich soil with plenty of organic matter. Water regularly. Each month, side dress with compost or organic fertilizer.

Planting and Growing: Soak seeds 12 hours to aid germination. Seeds need light to germinate, and moist soil. Start seeds indoors 8-10 weeks before last frost, and harden off slowly to prevent this biennial from going to seed. Direct sow after last frost.

Harvesting and Storage: Harvest the roots when they are about 3"-4" across. Let the first frosts sweeten the roots, but harvest before the first hard frost. Cut the stems off close to the roots and then lift the roots from the ground with a digging fork.
